vegan burger and curry idea?
Looking for a good vegan lentil burger recipe
I also want to make some good vegan curry dishes…any ideas?
My vegan child does not like lentil burgers, but loves this Thai Curry
250g firm tofu, cut into 1 cm dice
1-2 tbls green curry paste
(check label- most asian markets carry in pouches or cubes)
1-1 1/2 cups coconut milk
1 green capsicum, cut into thin strips
100 g green peas, fresh or frozen
200 g bamboo shoots
1 medium carrot, cut diagonally
3-4 small green squash, sliced
2 tbls soy sauce
50 g bean shoots
Marinate tofu in soy sauce for 20 minutes, drain.
Heat 1 tbls of oil in a medium saucepan, fry curry paste for 1 minute.
Add 1/4 cup of coconut milk, tofu and all the vegetables except the peas & bean shoots. Simmer for 5 mins.
Add remaining coconut milk, bring to boil, reduce heat and simmer until vegetables are nearly tender.
Add peas and bean shoots.
Cook for 5 to 10 mins.
Serve with rice and chutney.
Garnish with chopped shallots.
What’s up, vegans? Okay, I have a question about lentils…?
I’m trying a recipe for lentil burgers. I figured that there were different colors of lentils. We only have the green, and I never see the other kinds in stores [maybe because I haven't looked for it]. Is there a huge difference?
BQ: What did you guys eat today?
I’d recommend the standard green lentils for lentil burgers. French ones are too small, as are yellow & reds, plus those get too soft too quick. It’s what I use for my lentil burgers
As for what I ate, I just now ate a big bowl of toasted israeli couscous with edamame, kale & swiss chard… oh and lotsa garlic with it
. Later, I’ll be making vegan huevos rancheros (well, tofu rancheros)
