Raspberry Cream Cheese Cake Filling
What filing works with Red Velvet Cake?

Beside cream cheese or whipped cream. What filling works good for a red velvet cake? I’d like to find a fruit filing – I was thinking Apricot or Raspberry?



or strawberry but the white filling just makes a pretty contrast. The berrys or jam will not look very nice but the taste will be good.

How does this cake recipe sound?

I wanna bake a key lime cake for my boy friends birthday but I have read different things.
I’m thinking I will use this cake recipe:

1 white cake mix
1 instant lime pudding mix (dry)
4 large eggs
1/2 cup key lime juice (bottled)
1 cup vegetable oil
1/2 cup water

And I wasn’t sure for the frosting but because I am making a two layer cake I had an idea that I would mix a coconut cream cheese frosting for the filling and then cream cheese on the outside dusted with coconut. What do you think?
I was also considering making a raspberry filling but then I’m not sure what kind of frosting to use?
I don’t really want to use a plain frosting or butter cream.
Is this too much lime? I have read that adding lemon is also good but he really loves lime and I don’t want it to taste more like a citrus cake than a lime cake..

The artificial lime flavor in the pudding will overwhelm the subtle taste of the natural key lime juice. Trust me, they are NOT the same fruit. I grew up in Florida, so I’m well acquainted with both varieties. I would use vanilla pudding instead and add some grated key lime zest if you can. Frosting should NOT include lemon. Try a subtle powdered sugar glaze made with the key lime juice for added zing!
