Chicken Rice Vegetable Casserole
what to cook? veg-rice-squash mixture.?

i do a lot of cooking, and half the time i start out having no clue what i’m making. it just comes to me.

everything is vegan, but don’t let that scare you away from offering ideas; i have substitutions for everything. i know that lots of bisques get their thickness from pureeing rice…that was how i began.

the rice was pureed and mixed with vegan chicken broth. i then pureed a baked butternut squash, and “watered” it down with soy milk and combined the two mixtures. it is way too thick to be a soup..and there’s way too much of the mixture for just one dish.

i was thinking of turning some of it into a casserole – but what can i add that goes well with such a sweet squash? how are squash dishes usually seasoned and what vegetables go good with them? what do you think i should do? any thoughts are appreciated. :)

I would love to get cooking advise from you. I love vegan food!

As for your question… I’d suggest a little spicey, and maybe some sort of hard bean… Like red beans or kidny beans. Spicey and sweet are great, and I got my insperation from indian food. Also for texture maybe some sort of mushroom… one that has a mild flavor, just to get that meaty texture (It’s the best substitution for meat texture I found when I was Vegan)

MMM this makes me so hungry hehe.

I have a package of Southwest Blend Frozen Vegetables, a package of Spanish Rice & chicken what can I make?

A casserole?

You can make the spanish rice with a little more chicken brother or water than called for and heat the vegetables with a little butter and mix that together and put in a greased baking pan. Fry the chicken(season it with garlic, onion powder, and salt) in a pan with a little olive oil until half-ways done and then put the chicken over your rice. Bake it covered with foil at 350 degrees until done. If you like a sauce with yours try either a sour cream style sauce or cheese sauce that is put over enchiladas.
