What is the “best cupcake ever” in your opinion?
I’m kinda on a cupcake kick, I’m willing to have them shipped to me. I’ll take anything (and if it’s mom’s recipe please include the recipe with the frosting!) -Magnolia, Cake Box in Canada, Sprinkles, Auntie Em’s…what else?!
I work at the Teacake Bakeshop, so no need to mention that one!
Just make these and you will be in love with cupcakes once again (if you ever weren’t which cannot happen because cupcakes are awesome)
CHOCOLATE CUPCAKES
100 g butter
2/3 cup caster sugar
1 teaspoon vanilla essence
2 eggs, lightly beaten
1 cup self raising flour
1/3 cup cocoa
1/2 teaspoon bicarbonate of soda
1/2 cup milk
1. Preheat ovn to 180 degrees celius or 160 if fan forced.
2. Lay out about 30 patty cases.
3. Cream butter, sugar and vanilla until light and creamy. gradually add eggs and mix until combined.
4. sift flour, cocoa and bicarbonate of soda. add to creamed mixture with milk. stir until just combined.
5. spoon in patty cases. then cook for about 20 mintues or until skewer comes out clean. cool and then spread tops with chocolate butter cream
Chocolate buter cream
60g unsalted butter, softened
1 1/4 cups icing sugar, sifted
1 tablespoon cocoa, sifted
1 tablespoon milk
Combine all ingredients in a food processor and process until smooth.
I need a fluffy cake recipe I can make easily from a cake mix. Something that tastes like Sprinkles Cupcakes?
I am always in a rush and I need something easy from a cake mix box that I can just throw in the oven. How do I make them extra fluffy? ALso, I need a grocery store brand frosting..Whats the most tasty and FLUFFY frosting I can buy?
I recommend using Pillsbury Moist Supreme Premium cake mix or Duncan Hines Cake mix. I do not agree with another suggestion of extending the mixing time. This will only over beat your eggs in the batter and possibly cause your cake or cakes to fall flat.
*** I always follow the directions on the cake mix box and mix according to directions. I sometimes alter the baking tempeture by 5 to 10 degrees lower if I am baking a white cake mix though. I then bake longer.
*** Commercial cake mixes have been tried and tested again and again and even some grocery stores favor using them (I know of 1 big department store useing Duncan Hines). I favor the whipped canned frosting if you must use a premade store version. They are lighter and less heavy on your cake. Or you could use any canned frosting and whip it up further ( incorporate air) allowing it to spread easier on your cake.
