Any advice for a new vegetarian?
I live in a high calorie meat eating family so I wanted to become a lacto vegetarian. The first meal I ate tofu “chicken” quesadillas, then I had a salad, then tofu “orange chicken” with white rice and it was absolutely delicious. I try to include soy in my diet but I heard too much soul is bad for you… Should I eat too much of it? Is their other recipes I can try?
what also is good is Bocca or Mornigstar Burgers. They are Veggie Burgers and with cheese and ketchup they taste the same. Also Tofu mixed with a sloppy joe packed is an alternative to sloppy joe’s. Usually they have a vegetarian section at your local grocery store. Also you can look here for more ideas. Thanks and Good luck with being a vegetarian.

Copycat recipe for Qdoba’s chicken?
Yesterday I tried Qdoba Mexican Grill for the first time and absolutely loved the flavor of the chicken they used in my chicken quesadillas. Does anyone have some idea what to use as a marinade or spice rub to give chicken a similar flavor when cooked at home?
I put together a marinade that is strikingly similar. I don’t really know exact measures— I just kind of eyeball it–
Fresh orange juice (1 whole orange)
Fresh lime juice (1 whole lime)
Vinegar 1-2tbsp
Cumin 1-2tsp
fresh cilantro (chopped up)
fresh garlic 4 to 6 cloves chopped
oregano 1tsp
fresh ground pepper 1tsp
chili powder (couple of dashes)
can of chipotle peppers in adobo sauce (like a tomato paste) — this stuff is pretty hot– I recommend squeezing all of the tomato stuff out of the can and adding one or two of the peppers.
Mix everything up good in a food processor or similar and soak your chicken for several hours. Wipe off the excess and BBQ or George foreman for best results. If you try to cook indoors, expect a bit of smoke.
