How to make cupcakes moist and stay fresh?
I love making cakes, especially cupcakes and alot of friends have started to ask me to make them for weddings, birthdays etc. I use different recipes but have recently loved the Primrose Bakery book. Their cakes are delicious no doubt but I don’t think they last long, I always feel I need to make their cakes the same day as the events in case they are dry. This puts huge pressure on though and would love to make them 1-2days before.
I was recently at a fayre with my friend and there was a lady selling cupcakes, we bought a couple and the lady said they would last 4-5days!? I didn’t try it out, as gobbled them that day as they were yummy and moist but my only criticism was the tops were sticky which was weird?
So how do I make them moist and last?
Hi I have been making cakes for years and the best way to keep them fresh is to wrap them really well, once they are cooled, and then freeze them. This goes for cupcakes too. When you are ready to frost them take them out of the freezer, frost, decorate and box them up the day of. I do this with all of my wedding cakes and cupcakes too.
