Cheesecake not coming out firm?

Made a pumpkin cheesecake this weekend. but it came out very… soggy. almost like the consistency of firm pudding. do i need to bake it longer? the recipe didnt call for any flour and i had ususally added a few tesaspoons of flour for my plain cheesecake recipe. any ideas?



Usually after is chilled it firms up, flour or cornstarch will add some firmness I make my filling in a food processor, and add a bit of cornstarch with the sugar and cream cheese as I soften it to add the remaining ingredients, also using just egg yolks, and baking it slower and longer will help firm it up, I cook mine for 1 hour 45 minutes at 325 d F, turning it around half way through, as with all cake it bakes more evenly.

Recipe for Plain Baked Cheesecake?

I want to make a baked cheesecake for myself and my housemates. I want it to be a plain one, because i intend on making a lemon filling to go on top

1 tin Sweetened Condensed Milk
2 Egg Yolks
Rind and juice of 1 lemon

I had a recipe once where I baked the cheesecake for 90 minutes. After 1 hour I’d put on the lemon topping and bake it… turned out great. All I need is a baked cheesecake recipe now.

New York Cheesecake

Crust:
15 graham crackers, crushed
2 tablespoons butter, melted

Cheesecake:
4 (8 ounce) packages cream cheese
1 1/2 cups white sugar
3/4 cup milk
4 eggs
1 cup sour cream
1 tablespoon vanilla extract
1/4 cup all-purpose flour

Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.

In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.

In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.

Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.
