Banana Cream Cheesecake- Where did I go wrong?

This Kraft recipe said to divide the eggs- what did that mean. I literally divided the egg yolk and whites. I used Moist Delights double layer cake mix. I have no idea where i went wrong. The cake rose over the pan and had deep cracks in the top of it. It resembled nothing of a cheesecake.

First of all, it didn’t tell you to separate the eggs. It said to divide, 1 egg in the crust the remaining 3 eggs to be used in the filling. For the cake mix part, you just need to moisten the cake, almost like cutting in with a pastry blender rather than stirring, then you press it into the pan like a graham cracker crust. When I make any kind of a cheesecake, I place a pan filled with water on the bottom rack then I slide the pan with the springform on it onto the center rack. A cheesecake is done when the center is “almost” set, meaning it will almost still give a jiggle in the center. Overbaking is a common mistake with cheesecakes, that’s where the cracks come from.

I need a simple banana bread recipe links are fine. My wife made one a long time ago and it was like cake I want one like that so I can suprise her for mothers day



* 1/2 cup butter or margarine
* 1 1/2 cups granulated white sugar
* 1 1/2 cups mashed bananas 3 medium bananas
* 2 eggs well beaten
* 1 teaspoon vanilla extract
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 3/4 teaspoon salt
* 1/2 cup buttermilk
* or 1/2 cup milk
* soured with 1 teaspoon vinegar
* 3/4 cup chopped walnuts
* 4 ounce Cream cheese softened

Instructions

Preheat oven to 325F. Cream butter, cream cheese and sugar together thoroughly. Blend in bananas, eggs and vanilla. Sift flour, baking soda and salt together. Add to banana mixture, alternating with buttermilk and mixing thoroughly after each addition. Add nuts and gently mix. Pour batter into greased and floured loaf pan (min. size 9×5). Bake for 1 1/4 hours, or until done. Yields 1 loaf.

Note: I’ve found sometimes I have too much batter for the pan, and have left a bit out; have learned to bake the loaf pan on a cookie sheet so that if any spills over it will be caught before hitting the bottom of the oven!
