Why won’t my fudge set?

I followed this recipe,http://uktv.co.uk/food/recipe/aid/513459/sr/4 and did everything right, it’s been over an hour and a half and the fudge is still not solid. It’s harder than it was at first but still not cuttable. Any help?



Most likely the boiling was not completed fully. The rolling boil for 15 to 20 minutes is crucial to the process. If you are making a fudge you must reach a “soft ball” stage for the sugar. If you are making a brittle of some type you must cook the sugar to a “hard-crack” stage. It should work without a thermometer if you allow a constant boil for 15 to 20 minutes, but I recommend a thermometer. if it stops boiling anytime during the process it may not work. Get the mixture to a boil and keep it there without boiling over. If that doesn’t fix it then it probably is the humidity. It took me 4 tries before fudge actually worked out for me. Time and Temp is what it’s all about. Good luck.
