Having a party tomorrow and no flour. Can’t go to the store and i just decided to make some little desserts. Cookies or brownie recipes please. No chocolate chips either. Thanks.

Flourless Chocolate Brownie Cookies
Makes about 3 dozen cookies,
2 Large eggs
2/3 Cup Sugar
1 tsp Vanilla extract
1/4 tsp Almond extract
2 Tb Butter
7 oz Dark/Bittersweet Chocolate (60-80% cacao), chopped
*1/4 Cup Cocoa powder
1/4 tsp Baking Powder
1/8 tsp salt (Sea salt or Kosher) – use the salt only if you are using unsalted butter
Preheat the oven to 375 degrees.
Get out a large baking sheet and line it with parchment paper or a silpat. In the bowl of an electric mixer, use whisk attachment to beat eggs, sugar, vanilla and almond extracts on high speed for 15 minutes. This is key to getting the fluffy texture right.
While the eggs are whipping, heat the butter and chocolate in a heavy bottomed saucepan over medium-low heat, stirring occasionally with a rubber spatula until melted and smooth, then remove from the heat.
While the chocolate is melting, mix together the cocoa powder, baking powder and salt in a small bowl with a fork.
Gently fold the melted chocolate into the egg mixture with the rubber spatula until mostly combined but with some streaks still visible. Add the cocoa powder mixture and fold it in completely. Drop the batter by heaping teaspoonfuls onto the baking sheet, about 1 inch apart. Bake about 9 minutes, until the cookies have cracked puffy tops. Lift the parchment with cookies onto a wire rack to cool.
*Options: You can also add 1/2 Cup chopped toasted nuts or dried fruit, folding in after the cocoa powder is added to the batter. Baked cookies can be frozen for up to 1 month.
Flourless Chocolate Peanut Butter Kisses
1 cup sugar
1 cup creamy peanut butter
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 (12 ounces) package Special Dark Hershey KissesĀ®, wrappers removed
Preparation:
Preheat oven to 350 degrees F.
Beat sugar, peanut butter, egg, and vanilla in a large mixing bowl on medium speed for 2 minutes. The mixture will appear crumbly. In the palms of your hands, compress and roll dough into 1-inch balls. Place 1 inch apart on ungreased cookie sheet.
Bake for 10 minutes.
After 10 minutes, remove cookies from oven. Quickly and gently place one chocolate piece in the center of each hot cookie, pressing down lightly. Return to oven and bake an additional 2 minutes to slightly melt the chocolate.
Remove from the oven and gently tap cookie sheets on the counter once or twice to settle the chocolate into the cookies. Do not rap too hard. You want a bit of the chocolate points to remain. Let cookies sit on the pans until the pans are cool to the touch. Refrigerate to re-set the chocolate.
Yield: about 48 cookies
Flourless Blonde Brownies
1 C (2 sticks) butter, melted
1 C Splenda
1 T Vanilla
2 C Almond Meal
1 T cinnamon
4 Eggs, beaten
Melt butter in large microwaveable bowl
Add Splenda and vanilla to melted butter, cool slightly
Add almond meal, cinnamon and eggs, mix thoroughly
Pour into buttered 8″ square glass baking pan
Bake @ 325 for 40 minutes
Once thoroughly cooled, refrigerate
Cut into 16 squares and serve.
