Crock Pot Chicken Legs
Thawed chicken legs in the crock pot with corn, broccoli and chicken broth. For how long should it be cooking?

Well, your broccoli will cook before everything else and may lose that nice green color. It depends upon how many chicken legs you have in there. Could be a couple of hours, could be more if the pot is considerably full. Check them for tenderness every 2 hours or so.

Shouldn’t the water in a crock pot be simmering.?

It’s my first time!

I have some chicken legs in there. On low for 8 hours. They are completely covered by the water. I guess it’s like 1/3, or barely 1/2, full of water. It’s been 2 hours and the water isn’t simmering. The first 1/2 hour I did on high. I do hear a little popping here and there, pretty rare. The legs were kinda frozen.

The liquids in my crockpot really don’t start to simmer until after cooking for several hours, especially when on low. And, yeah, I will occasionally hear the lid rattle while it’s cooking. Since your chicken was frozen, may take a little longer to heat up.
