Cooking a corned beef brisket in baby George foreman rotisserie oven?
Does anyone have a recipe for what’s stated above? Ive tried roasting it in the oven as directed on the package but it was too dry. maybe by cooking it in the rotisserie oven it will be more tender?

I don’t think using a George Foreman Rosisserie will help you get the desired results you need either. A rotisserie will not keep in the moisture needed to properly cook your corned beef brisket. Here’s my two cents. This recipe is REALLY simple. All you need to do to cook a corned beef brisket are three things:
1.Remove the corned beef from the package. Do not trim the fat down. Put the corned beef brisket in a large pot (with medium tall sides & plenty of room around the meat).
2. Cover it with water (about an inch above the meat is just fine). Note: I like to make a mixture of water with about 1 C. of light beer/ale in it. It really adds to the flavor.
3. Bring it to a boil on high heat, then cover simmer for 3-5 hours. During the last 10 min. of cooking time, add in scrubbed baby potatoes, carrot,celery & onion wedges. These are great to serve as a side dish. When it is done, the meat will remain very reddish pink in color. But not to worry…it will be fully cooked. Now, once it’s cooled down enough to handle, you can trim off all of the fat if you want. Slice & serve.Enjoy with a glass of Guiness stout…a post St.Patrick’s Day meal.
