Chicken Vegetable Soup Crock Pot
Question about making soup with a crock pot?

Ok, this is actually a 2 part question. I’m making vegetable soup with a chicken broth base in my crock pot.

Part A: Which would work better, fresh or canned mushrooms?
Part B: What setting on the pot would be best? I want the veggies to be cooked but not super soggy!! The pot has low med hi settings. I have never tried to make soup in the crock pot before but I’m gonna and I know it’ll be good. I just need these questions answered!!!!
I always end up with large chunks of potatoes somehow and I intend to make a big batch. It can sit all day as it will be a supper meal.

It is pretty hard to screw up soup in a crock pot.

If it will sit all day (8 hours or more), use low setting. As for mushrooms, either would work, but fresh generally taste better (in my opinion).

I’m needing a good Whole chicken recipe for my crockpot?

I have a fryer hen i bought at my local farmers market and it’s been in my freezer for 2 months. Now that its nice and cool where i live i’ve started using my crock pot about once a week for stew,soup,etc..I want a dish to cook using the whole chicken like a rotisserie or baked type of recipe. I don’t want to cut the chicken up i would like to cook it whole with some vegetables and a sauce of some kind. Does anyone have any ideas?



clean out the inside of the chicken and stuff with quarters of orange, onion (peeled) and some cloves of garlic, rub some rock salt and cracked black pepper over the skin with a little olive oil and place in baking tray/ crockpot.

chop up some sweet potato, parsnip, carrots and red onions and place in another baking tray, drizzle over some olive oil, balsamic vinigear, salt, pepper and a small amount of honey (if you have it, not necessary though)

Place chicken in oven and cook til juices run clear (approx1.5-2 hours) , Roasted veg will take 1 hour (covered for first half hour, then uncovered and tossing occasionally.)

Pour out juices from cooked chicken onto hot pan and reduce, add glass of white wine and reduce, add decent amount of taragon and a cup of cream, stir sauce together, should be a decent kick from the taragon, if not add some more. Transfer sauce to jug.

This dish is probably best served with some mashed potatos.

Really delicious, I made it for my inlaws the othe night and they were blown away (my father in law doesn’t normally like a cream sauce but he was going back for more and more)

The best thing about this dish is that it will allow you to have full flavour and also be able to really taste that lovely hen that you bought!
