Cheesy Chicken Enchilada Recipe
Chicken enchilada recipes? I have the canned sauce, cheese and tortillas?

I would like them to be practically smothered in the sauce and very cheesy. I had them at a get together and just can’t seem to make them near as well as the enchiladas at the party.



Please ditch the canned sauce. That stuff is horrible and will kill you.

This is a quick and easy recipe for Chicken Enchiladas. My friends and roommates love them, and I hope you will too!

2.5 pounds of Boiled Chicken (Be sure to add a little seasoning while boiling)
2 small cans of Cream of Mushroom
1 small can of Cream of Chicken
1 can of Rotel tomatoes, undrained
1 can of Green Chilies
2 lbs of Velveeta
1 package of flour tortillas (about 12 or so)

Put all ingredients in a large boiler. Once cheese has melted, add the boiled chicken. Let cook for 10 minutes. Scoop 1 or 2 tablespoons into flour tortillas, roll, and secure with toothpicks if necessary. Pour the remaining mixture on top of enchiladas. Bake at 400 degrees for 20 minutes. You may add shredded cheese on top and bake until cheese is melted.
