White Chocolate Raspberry Filling
Different cake fillings?

Hi,

I’m making a anniversary cake. I was looking for suggestions for the different layers. It’s probably going to be a 3 layer cake 14″,10″, and 6″.

I was thinking –

**chocolate with chocolate buttercream or a chocolate with nut filling and chocolate almond buttercream icing.

** white almond cake with raspberry filling and almond buttercream icing.

** plain vanilla cake with buttercream icing.

Any suggestions? And any suggestions to the filling? I saw at the store today nut filling in the baking aisle…and I was wondering about raspberry jam/jelly for the other filling…(not sure if they would drown the cake though).

Oh btw, the cakes will be covered with fondant.

your ideas sound great! Raspberry jam can be used, or you can use raspberry pie filling, either one works. One hint, though. thoroughly crumb coat your layers, and let it dry completely. Then go ahead with a medium thin layer of buttercream, and put your filling on top of that. this way your cake stays pretty much intact, with not alot of seepage of the filling. This is how my grandma taught me to do layers, she was a professional cake maker/decorator. I have used this technique multiple times, and it always works for me! Good luck, I am sure your cake will be a major success!!

If you could eat anything right now what would you eat?

I would love to eat a chocolate cup filled with chocolate mousse or white chocolate raspberry cheesecake!

Double Chocolate cheesecake sprinkled with reeses crumbles, bits of snickers, chocolate and caramel syrups, a dollop of whipped cream, and a cherry on top.
