Healthy Chicken Recipes For One
What r real good and easy recipes for any kind of chicken, fish, and veggies?
something healthy but yet tasty…what r real good ones…
Easy Lemony Fish
1 lb Fish Fillets, (flounder, fluke, etc. or fish of your choice)
1/4 cup Chicken Broth
4 x Lemon Slices (4 to 6)
20 x Sprays Imitation Butter Spray (such as I Can’t Believe Its Not Butter spray)
I use a nice lump of butter here, melted in the baking dish.
1/8 tsp Pepper, or to taste
1 tbl Dried Parsley
Notes: Never overcook. Cooking fish at too high a temperature or for too long a time can toughen the fish and destroy natural moisture and flavor.
Overcooking is the most common mistake in fish and seafood cookery. Fish loses its translucent appearance and becomes opaque when thoroughly cooked. Pierce the fish at the thickest point. If it flakes easily and the flesh falls from the bones, you know it is done.
Preheat oven to 450 degrees. Arrange fish in a 9 x 13″ baking dish. Top with
remaining ingredients. Bake fish, uncovered, for 10 minutes per inch of thickness, or until fish flakes easily with a fork.
STEAMED VEGGIES (EASY)
Heat up some water in a pan, place veggies of your choice in a steamer.
Throw in some baby carrots, califlower and/or brocolli florets, cook till tender but somewhat crunchy, pour off the water, add a bit of seasoning if desired.
BAKED CHICKEN WITH CREAM GRAVY
1 (3 lb.) fryer or you can use just breasts or legs and thighs
1 stick butter
lg. can Carnation Evaporated milk
Flour
A little salt and pepper as desired.
Shake chicken in paper bag with flour. Melt butter in baking dish in oven. Remove and lay chicken, skin side up, in dish with butter. Pour milk over all and a little water. Bake at 375 degrees for 45 minutes to an hour, adding a little water as needed. Turn chicken over during baking.
Serve with rice or mashed potatoes. This cream gravy is very good.

I’m revising my families meals so we can eat healthy. I’m finding healthier recipies and alternatives to foods we reguarly eat and need help.

Also, no difficult recipes please. Like cutting up garlic and a dash of lemon and crap like that.
Speghetti: Try using wholemeal pasta and a homemade vegetable sauce. I usually just put a tin of tomatoes, muchrooms, beans – whatever you like into a pan and simmer then pour on top of the spaghetti.
Pizza – A nice alternitive to pizza is a Pitta bread pizza. Just pop you own choice of toppings – healhy ones of coarse. onto a toasted, halved pitta and put under the grill until melted/warm.
Grilled Chicken – Grilled chicken is already healthy. I like to cook it in a spicy cajun or bbq flavouring and eat it with a salad and some salsa on the side. Really yummy.
Wraps – If you eating wraps it’s basically the same principal. Buy wither wholemeal or low fat wras and fill them with grilled veg and meat. Nothing fried.
Pasta – Same as the spagetti, buy wholemeal and make your own sauces or buy the low fat versions. Rice is also a good alternitive – i like to buy the ready flavoured rive like mexican etc then eat with a pitta.
Another one of my favourite low fat meals is hoem made soup. It is so easy to make! Just buy some veg 0 whatver you like., My favourite is sweet potato, butternut squash and carrot. You can even buy these ready chopped in the supermarket. Just boil them until they are semi soft, pour out a 3rd of the water or just enough until the water is just above the veg in the pan. Then add in 2 chicken or veg stock cubes then leave to simmer until the veg is soft. Then if you like it smoother just blitz through it with a hand mixer or in a blender! Your soup can be ready within 15 mins!
