Need help with Avgolemono soup recipe?

I am making hummus, Avgolemono, Tzatziki, greek salad, etc. for Christmas eve. I’d like to whip up a quick and easy soup as a starter. I included a link to the recipe I found below. I’d like to improve on the recipe by using part of a fresh roasted lemon chicken from the grocery store deli. I’m not sure how much to use and when to put it into the soup. Also, if there are any *easy* ways to improve the recipe (like using orzo?), let me know.

You could add a little sour cream and white wine.I would add dillweed,white pepper,granulated garlic,onion powder,paprika and a little celery salt.
Add your chicken about 15 mins.before its done.Just to heat through.Whatever amount you would like to add…some people like lots of meat in there soup and some like less,use your own judgement.

I need help with a Greek dish?

I attempted to make a complete Greek dinner for my family. I found this recipe at a site, but when we tried it, it was rather bland. I followed the recipe exactly, but was very disappointed. What can I add to it to make it more flavorful, but still keep it in line with a Mediterranean dish?

Here are the ingredients: 1 (2- to 3-pound) chicken, cut up
3 tablespoons olive oil
5 cloves garlic, chopped
3 yellow onions, chopped
3 cups tomatoes (fresh or canned), chopped
1 (6 ounce) jar green stuffed olives or 3/4 cup salad olives
Black pepper, to taste
1 tablespoon dried oregano (or 2 tablespoons chopped fresh)
1 cup dry red wine
Salt, to taste

You brown the chicken, then add the rest of the ingredients and simmer for 30 min. I used all fresh spices. Any help spicing it up, or any suggestions of a substitute recipe would be greatly appreciated. Thanks!



Add 2 Whole heads of garlic, a Whole White onion to the 3 you have , a teaspoon of Vinegar, Use fresh and dried Oregano and Sea salt(very important) and Fresh Ground Black pepper(again, very important), add 2 small Whole natural tomatoes, washed and with the skin, and a few flakes of red pepper flakes(you won’t taste the heat), and add the juice of the Olives to the Chicken pan while baking(uncovered at first to create that crust, then covered)..and save some Olive juice, whole tomato, parsley, onion, garlic, and get some chicken broth for the AMAZING rice you’ll make as a side DISH, add a salad and ENJOY:)
